Making an onion syrup
Ingredients
1 large (or 2 small) RED onions
450g/1lb brown sugar or clear honey
1 jar
Method

Peel and slice the onion.

Put 3 to 5cm (1 to 2 inches) onion in bottom of jar

Cover with 3 to 5cm (1 to 2 inches) sugar/honey.

Fill jar with alternating layers, pressing each layer down firmly before adding more. Cover last layer of onion with a thick layer of sugar or honey.

Leave overnight.

Strain off liquid and throw away any undissolved sugar left at bottom of jar.

Bottle and label.

Store in cool, dark place. Keeps for about two weeks.

Anti-infective, soothing, removes catarrh from chest.
